True absinthe is best enjoyed diluted with ice-cold water. The proper ritual involves pouring water over a sugar cube resting on an absinthe spoon into a glass of the spirit. As the water hits the absinthe, it gradually clouds—a reaction caused by the herbs (especially anise and fennel)—and releases a complex herbal aroma.
