Assam is a strong black Indian tea processed using the C.T.C. method—Crushing, Tearing, and Curling. This tea is excellent with milk or as a base for tea blends, such as Yogi tea.

This tea tastes great when prepared the classic way—use about 3 teaspoons per half a liter of 100°C water and steep for three minutes. However, it also makes an excellent Yogi Masala.
Personally, I prepare it by letting about three teaspoons of Yogi spices toast in a pot over the heat until fragrant. Then, I pour in a liter of water and let it boil for 15 minutes. After boiling, I add about 2 teaspoons of Assam tea and let it simmer for another 5 minutes. Finally, add milk to the tea.
It is best to add as much milk as the amount of water that evaporated during boiling.
To finish, sweeten your Masala with about two tablespoons of honey. Since the preparation takes at least 20 minutes, it is the perfect choice for a late weekend breakfast or a relaxing afternoon.

Tento čaj je velmi chutný při klasické přípravě - tzn. zhruba 3 čajové lžičky na půl litru 100° C vody, louhování tři minuty. Vhodnou variantou je však uvařit z něj Yogi Masalu.
Já osobně ji připravuji tak, že zhruba tři čajové lžičky Yogi koření nechám v hrnci na plameni provonět. Dále zaleji litrem vody a nechám provařit 15 minut. Po provaření přidám zhruba 2 lžičky Assamu a nechám vařit dalších 5 minut. Čaj se dále zalévá mlékem.
Optimální je dolít tolik mléka, kolik se nám během vaření odpařilo vody.
Závěrem je skvělé Masalu dochutit a přidat zhruba dvě polévkové lžíce medu. Jelikož příprava zabere minimálně 20 minut, je vhodnou volbou na víkendovou pozdní snídani nebo k odpolednímu odpočinku.
