Kombucha is also fascinating because it is relatively simple to make. The entire process takes about 7-10 days, starting with a tea infusion mixed with sugar. This sweet tea is then cooled to room temperature to preserve as many live cultures as possible when the SCOBY (symbiotic culture of bacteria and yeast—often called a tea mushroom) is added. The container is covered with a clean cloth so the kombucha can breathe. The bacteria then gradually consume the sugars and transform them into valuable, beneficial substances, while also producing carbon dioxide that naturally carbonates the drink. You can enjoy kombucha in its original form or choose from an almost infinite number of ways to flavor it.



The recommended daily dose of kombucha is often cited as 0.33l per day.



It is also good to keep kombucha storage in mind. Glass bottles are always better because kombucha degrades quite quickly after contact with air. Drink it well-chilled for the perfect "kick."
